Chicken and Brown Fried Rice

A delicate combination of chicken, veggies and Laila Brown rice comes alive in this soul satisfying rice dish.The best part about this recipe is it’sfull of protein and fibresmaking it ideal for kids. Appropriate for leftovers, it’s a healthy alternative to your takeaways.

Method

  1. Heat some vegetable oil in a frying pan over medium heat. Sauté some garlic. Add in chicken, chopped bell peppers and scallions.
  2. Stir and cook until the chicken is cooked through; for about 10 minutes. Remove the chicken onto a plate and keep aside.
  3. Heat the remaining oil in the same frying pan over medium heat. Add Laila Brown Basmati rice and stir to heat through.
  4. Mix in the soy sauce, vinegar and peas; continue to cook for 2 minutes.
  5. Add the chicken mixture to the pan stirring all the time with rice.
  6. Garnish with parsley and enjoy warm.

Ingredients

  • 500g Laila Brown Basmati rice (cooked)
  • 250g boneless chicken breast fillets (skinned)
  • ½ red & yellow bell peppers (chopped)
  • 3-4 scallions (finely chopped)
  • 4 cloves garlic (finely chopped)
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 150g of frozen peas (thawed)
  • Parsley (for garnishing)
