Craving a Moroccan delicacy during Ramadan? Here’s for you a quick and easy Vegan Harissa Soup made from Laila Green Lentils, Laila Ginger Paste, Laila Cumin Powder, Moroccan spices and Harissa powder by @alchemy.eats.

A hearty soup all ready within 45 minutes is nourishing enough to break your day long fast. You may choose to serve it with piping hot samosas and some delectable kebabs for your iftar platter.

Method

  1. Finely slice 2 red onions, 1 tomato, and halve & slice 2 carrots.
  2. Boil Laila Green Lentils in water for around 20 minutes or until cooked.
  3. In a large pan, fry chopped vegetables until softened.
  4. After 4-5 minutes, add butter beans, Laila Cumin Powder, harissa powder, Laila Ginger Paste and vegetable stock.
  5. Stir well and then add in cooked Laila Green Lentils and chopped parsley. Leave on a low heat for 20 minutes.
  6. Serve it up with some lip-smacking snacks garnished with chili flakes and chopped parsley.

  • 1 cup Laila Green Lentils
  • 1 tsp Laila Cumin powder
  • 1 tsp Laila Ginger paste
  • 2 red onions
  • 1 lemon
  • 1 tomato
  • 2 carrots
  • 1 can butter beans
  • 1 tsp harissa powder
  • 400ml vegetable stock
  • Chopped parsley
  • Chilli flakes
